Harissa Sweet Potato Wedges

This Harissa Sweet Potato Wedges recipes can be used as just a fun snack or pair it with such as the Moroccan Sausage Stew. Harissa paste is spicy, so it depends how hot you want this dish - 1 tbsp was in the recipe, but a lot of cooks added more. Some also added a bit of oil, but with sweet potatoes, this can stop them from becoming crisp, and makes them greasier. It's a bit of trial and error for this one,
  • 1 kg sweet potatoes, scrubbed and cut into medium wedges (not too thin or they go too crispy)
  • 1-2 tbsp harissa paste
To Serve:
  • Sour cream
  • Chives
  1. Heat the oven to 200C/180 fan/gas 6.
  2. In a large bowl combine the wedges with the harissa. Mix well.
  3. Transfer to a baking tray and cook for 40-50 mins until the potatoes are tender and crispy at the edges.
  4. Serve with the sour cream mixed with the snipped chives.
